Course content includes:
- Fast training for staff in essential skills: correctly serving & clearing plates, using trays, handling glassware, setting tables, napkins, table cloths, wine service, bar coordination, silver service, coffee service, multi-course dinner settings, managing spills
- Etiquette and standards for modern functions: weddings, corporate events, special dinners, seminars, cocktail parties and entertainment, plus function terms and jargon
- Staff supervision: delegating tasks, organising breaks, coaching new staff on the job, working with reluctant staff, setting and maintaining standards
- Organising the paperwork: client agreements, running sheets, room setup & diagrams, briefing, debriefing and other essential systems
- Working with clients at the event: skills and procedures, customer psychology
- Understanding kitchen operations: how it all comes together, working with chefs
- Handling multiple events: managing your time, your clients and your staff
- Co-ordinating suppliers: flowers, photographers, musicians, event managers
- Practical OH&S: briefing staff & clients, food safety and RSA for a safe & happy event
