  • Staff supervision: delegating tasks, organising breaks, coaching new staff on the job, working with reluctant staff, setting and maintaining standards
  • Organising the paperwork: client agreements, running sheets, room setup & diagrams, briefing, debriefing and other essential systems
  • Working with clients at the event: skills and procedures, customer psychology
  • Understanding kitchen operations: how it all comes together, working with chefs
  • Handling multiple events: managing your time, your clients and your staff
  • Co-ordinating suppliers: flowers, photographers, musicians, event managers
  • Practical OH&S: briefing staff & clients, food safety and RSA for a safe & happy event
