- How to coach staff in essential function skills: correctly serving & clearing plates, using trays, handling glassware, setting tables, napkins, table cloths, wine service, bar coordination, silver service, coffee service, multi-course dinner settings, managing spills
- Etiquette and standards for modern functions: weddings, corporate events, special dinners, seminars, cocktail parties and entertainment
- Staff supervision: delegating tasks, organising breaks, coaching new staff on the job, working with reluctant staff, setting and maintaining standards
- Organising the paperwork: client agreements, running sheets, room setup & diagrams, debriefing and other essential systems
- Running an effective briefing session before the event
- Understanding function and event jargon, training staff in food & beverage knowledge
- Working with clients at the event: skills and procedures, customer psychology
- Understanding kitchen operations: how it all comes together, working with chefs
- Handling multiple events: managing your time, your clients and your staff
- Co-ordinating suppliers & services: flowers, photographers, video, musicians, event managers
- Practical OH&S: briefing staff and clients, food safety, RSA, keeping the event safe & happy
