  • Ken Burgin, workshop presenter and host for the day, has been actively involved in restaurants and cafes for more than 25 years. First as owner of Cafe Troppo and Paganini Restaurants in Sydney, and for the past 14 years, working with restaurants, hotels and cafes in an advisory role. Ken has presented workshops to tens of thousands of aspiring restaurant owners and hospitality professionals over the past eight years. During the Melbourne Food & Wine Festival time, Ken brings this special workshop to Melbourne for the fourth time.
